This seven-course dinner unfolds through three movements: dusk, nightfall, and dawn, each paralleling the past, present, and future.
Dusk looks toward the origin.
Family, memory, ancestry, and the flavors that continue to shape us long after we leave the places where we first encountered them. It is the part of the evening rooted in what has already been established.
Nightfall occupies the uncertainty of the present.
It is the space between instinct and confidence, where ideas are still in their formation and where growth often happens before it is realized. It reflects the repetition, doubt, curiosity, risks, and collaboration that define the ongoing process of becoming.
Dawn opens toward possibility.
It looks beyond what is already known and toward a future shaped by movement, relationships, work, loss, curiosity, and lived experiences. It reflects the belief that cooking is not completed in a single kitchen or a single moment, but continues to evolve through the life surrounding the work.

The evening offers one glimpse of an ongoing process - an expression of where we have been, where we stand currently in our lives, and everything still waiting beyond the horizon.
Nicholas Jeffrey Zades (b.1988) is a Phoenix-based chef raised in the northwest suburbs of Chicago in a Greek and Italian family. His earliest connection to food began as a child, helping his mother and grandmother in the kitchen, where cooking became tied to care, memory, and bringing people together.
Since moving to Phoenix in 2018, his work has been shaped by the desert, its restaurant community, and the relationships built through hospitality. His cooking is rooted in the places and people that formed him, while remaining open to the person he is still becoming.
Alejandro Froylan Lopez (b.1999) is a young chef looking to find his voice in cooking and craft in the hospitality industry. Originating from Illinois, he has grown in a constant state of movement, from living in the Yucatán as a child to moving back and forth between Arizona and Illinois. Drawn to travel due to his ever-shifting surroundings, he finds inspiration in new experiences and places he’s visited.
He seeks to gain more knowledge and refine his skillset by exploring new culinary landscapes, just as he experienced growing up. To Alejandro, cooking is a conversation starter. It evokes curiosity, comfort, and community. He hopes to one day create a space to host that conversation.
