Marco Nuñez — ADELANTÉ
Born in 1999 in East Los Angeles, California, Marco moved to Arizona in 2017, where he began working his way up through professional kitchens. Becoming a chef was never a question — it was something he had known since childhood.
Growing up, his family often gathered for carne asada’s –- moments filled with smoke, laughter, and connection. Those memories shaped his relationship with food and fire. When it came time to create his own pop-up, the grill felt like the only true focal point.
ADELANTÉ was born from both memory and mindset. The name comes from something his nina would often tell him whenever he found himself overthinking: adelanté — keep moving forward. Over time, that phrase became a philosophy. In the kitchen, it means pushing ahead, evolving, staying one step forward, never stagnant.
ADELANTÉ manifests as an elevated wood-fire dining experience rooted in tradition, yet always progressing.
To Marco, fire is the most primitive and honest way of cooking.
